Pumpkin Pie Bars

Ingredients:
- 1-1/2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 cup whole wheat pastry flour
- 1 cup firmly-packed brown sugar
- 3/4 cup butter
- 1 large egg, beaten
- Pumpkin Filling:
- 3 cups pumpkin puree (not pumpkin pie mix)
- 2/3 cup firmly-packed brown sugar
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 tsp. ground cloves
- 1/4 tsp. kosher salt
- 1 cup evaporated milk
- 2 large eggs
- 3/4 cup chopped walnuts
Preparation:
- Preheat oven to 350 degrees F. Spray a 9 x 13 baking dish with cooking spray.
- Stir oats, flours and brown sugar together in a large bowl. Using a pastry blender, two knives or your fingers, cut in butter until the mixture becomes crumbly. Stir in egg.
- Set aside 2 cups of the mixture. Press the remaining mixture into the prepared pan. Bake 20 minutes until lightly browned. Let cool, while you make the filling.
- Beat pumpkin, brown sugar, cinnamon, nutmeg, cloves, salt, evaporated milk and eggs until smooth. Pour over crust.
- Add chopped walnuts to reserved oat mixture. Sprinkle evenly over pumpkin layer.
- Bake 30-35 minutes until top is lightly golden and pumpkin filling is set. Cool pumpkin bars completely before cutting.
