MEXICAN GREEN BEANS


Ingredients:
  • 1 tablespoon vegetable oil
  • 1 lb. green beans, trimmed
  • 1 large onion, peeled and chopped
  • 2 cloves fresh garlic, minced
  • 1 can (10 oz.) RO*TEL Diced Tomatoes & Green Chilies
  • 2 teaspoons basil
  • juice of 1/2 fresh lemon
Directions:
In a large skillet, saute beans, onion and garlic in hot oil until beans
are tender-crisp.  Stir in RO*TEL and basil.  Simmer uncovered for
10 minutes, stirring occasionally.  Sprinkle with lemon juice.
Serves 6.
