Marinated Pork Kabobs with Dipping Sauce

Brochetas de Cerdo or pork kabobs flavored with traditional Spanish spices have a new twist - balsamic vinegar. We like to reserve some of the marinade to use as dipping sauce. After cutting boneless pork into cubes, then marinate in balsamic vinegar, olive oil and spices. Thread onto skewers with peppers and mushrooms, and grill. Serve as a main course with saffron-flavored rice on the side, or as a tapa.
