Cold Pea Soup is a delicious and light main dish soup recipe that's perfect for hot summer days because it requires absolutely no cooking.

Prep Time: 15 minutes

Total Time: 15 minutes

Yield: 4 servings

Ingredients:

  • 1-1/2 cups frozen baby peas, thawed
  • 10 oz. can ready to use chicken broth
  • 1 cup half and half
  • 1 celery stalk, chopped
  • 1 lettuce leaf, torn into pieces
  • 1 Tbsp. chopped fresh mint
  • 1/4 tsp. salt
  • 1/8 tsp. pepper

Preparation:

Combine all ingredients in food processor or blender, cover, and process or blend until smooth. 
Chill thoroughly before serving. Sprinkle a little more fresh mint on each serving.
