Easy Chocolate Mousse

gives the the flavor a bit more depth.

Yield: Serves 8
Ingredients:
- 2 ounces German sweet chocolate, or semisweet
- 3 tablespoons espresso or very strong coffee
- 1 package (3.4 ounces) instant chocolate pudding
- 1 1/4 cups cold milk
- 2 cups frozen whipped topping, thawed (lite is fine)
Preparation:
In a small saucepan, melt the chocolate with the coffee over low heat. Remove from the heat
and let cool slightly.

In a medium bowl, beat the milk and pudding until thick and smooth, about 2 minutes. Beat in
the chocolate mixture until well blended.

Fold in the whipped topping. Spoon into dessert dishes or a serving bowl. Cover and refrigerate

This mousse is beautiful when layered with whipped topping and cookie crumbs or raspberries.
