This dessert is easy to make, and it's relatively light if "lite" topping is used. The espresso or strong coffee
gives the the flavor a bit more depth.

Prep Time: 6 minutes

Total Time: 6 minutes

Yield: Serves 8

Ingredients:

  • 2 ounces German sweet chocolate, or semisweet
  • 3 tablespoons espresso or very strong coffee
  • 1 package (3.4 ounces) instant chocolate pudding
  • 1 1/4 cups cold milk
  • 2 cups frozen whipped topping, thawed (lite is fine)

Preparation:

In a small saucepan, melt the chocolate with the coffee over low heat. Remove from the heat
and let cool slightly.
In a medium bowl, beat the milk and pudding until thick and smooth, about 2 minutes. Beat in
the chocolate mixture until well blended.
Fold in the whipped topping. Spoon into dessert dishes or a serving bowl. Cover and refrigerate
until serving time.
This mousse is beautiful when layered with whipped topping and cookie crumbs or raspberries.
