Avocado Gazpacho
Description
Deceptively healthy, this gazpacho is loaded in flavor and packed with fresh fruits and vegetables. Perfect first course or light dinner in the heat of summer.Ingredients
- 2 avocados, finely chopped
- 1 cup cut-up (1/2-inch) papaya
- 1 chayote squash, finely chopped
- 1/2 cup finely chopped green bell pepper
- 1/4 cup minced scallions
- 2 tablespoons minced red onion
- 1 tablespoon Spice Islands Ginger, Crystallized
- 1/2 teaspoon Spice Islands Red Pepper, Crushed
- 2 cups tomato juice
- 1-1/4 cups pinapple juice OR mango nectar
- Several grinds Spice Islands Sea Salt and Black Pepper Adjustable Grinder
