Spaetzle

My neighbors demonstrated how tag teaming the pressing, boiling and rinsing  of the dough and noodles created the perfect Spaetzle! Using his grandmother’s spƤetzle press, Steve (along with his sidekick, Shelli) taught my friend, Susan, and I how to make our own German noodles.

The Spaetzle Press

There are many alternatives to the classic spaetzle press, but I assure you, using the real thing is worth it. I’ve tried a ricer, a colander and even a slotted spoon. I finally broke down and purchased a proper spaetzle press, but it sat gathering dust in my pantry. When my neighbors, who have made spaetzle over a hundred  times, invited me and another girlfriend over for a demo,  I couldn’t refuse. Steve had a treasure in his grandmother’s press and he and Shelli have the process down to an art. When it was my turn to transform my dough into noodles, I realized how ridiculously simple the whole process can be. Thanks so much for the fun afternoon, Seve and Shelli!

Caramel Cake

Yes, I’m posting a 3 Layer Caramel Cake just when you’re starting your New Year’s resolutions. I apologize. Just pin this to bring to your next family gathering where you can sample just a sliver and sabotage everyone else’s diet. I’m sure there’s a kale salad on my blog somewhere if you want to move on!

I Longed for a Caramel Cake

I was watching The Chew about a month ago and Carla Hall baked up a caramel cake with a deep caramel colored icing poured over the top. The cohosts were moaning with pleasure with every bite. I wanted to tackle this recipe even though the hubby snubs any caramel treat I make. Silly man. But when I went to their website, those who had attempted this cake had major problems with the icing. Apparently, they found that briefly heating up large quantities of brown sugar and cream doesn’t necessarily make caramel. Duh. Lots of grainy disasters. I’ve had enough of those on my own. Thank.you.very.much. I had to find an alternative

Layered Mousse Cake #SundaySupper

A group of girlfriends gathered for a holiday luncheon the week before Christmas. I volunteered to bring dessert, natch. Once it was decided we’d surprise one of our friends for her upcoming birthday, I knew it had to be special. I went deep into my archives to retrieve an exquisite recipe for this Layered Mousse Cake. It was a huge hit.

Layered Mousse Cake

I’ve made so many chocolate mousses and mousse cakes that I’ve lost count. Every iteration I’ve seen, I’ve tried. This is one, though, that I’ve made more than once. It’s memorable. It’s decadent. It’s a show stopper. My friend, Shelli, has a birthday the same day as my son, Tom. Two days after Christmas. Lost in the shuffle of the holidays. We were going to make sure she knew we loved her. There was swooning after the sampling of this layered mousse cake began. If you need a special dessert, this is the one for you!!
