A Healthier Spiced Apple Ring Recipe

Spiced apple rings are a sweet-and-sour, lightly pickled treat usually served at winter holiday feasts. They are as bright red as cranberries, and look cheerful on your guest's plate next to the ham or stuffing. But unfortunately the commercially available versions get that bright hue from artificial food colors.
I set out to come up with a way to make spiced apple rings that would have that same festive color but without the added chemicals. What I came up with is this recipe that uses natural beet juice to achieve the color. I promise you don't taste the beet in the final version, but you do get beautifully bright red apple rings that are lightly flavored with cinnamon and cloves:
