ZUCCHINI PATTIES


ZUCCHINI PATTIES

Slightly crispy outside, a little soft inside.  Oh so yummy fritters!
INGREDIENTS
eggs
zucchini, medium, grated
1/4 cup onion, chopped, yellow or white
1/2 cup flour, all-purpose
1/2 tspn salt
1 cup parmesan cheese, grated
butter for cooking
DIRECTIONS
1. Heat skillet over medium-low heat
2. Beat eggs in bowl
3. Add all ingredients except cheese and butter, mix
4. Slowly add cheese and mix
5. Add butter
6. When butter is melted, drop about 2 Tbs of the mixture into the skillet and gently flatten with spoon to make a roughly round patty.  Repeat until skillet bottom is full.  Usually I can cook 4 at a time in my 12" cast iron skillet.
7. Cook a few minutes, until edges of patties begin to look a bit dry, and the bottom has browned a bit, then flip
8. Cook until other side is browned, then put on a plate
9. Repeat steps 5-8 until batter is gone.  Serve.
NOTES:

Servings: 8 patties, about 3 servings

You can substitute cheddar cheese for parmesan as well.
