Peanut Butter Oatmeal Cookie Sandwiches
Ingredients:
- 1 cup butter, softened
- 1 cup peanut butter
- 1-1/4 cups brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 2 teaspoons vanilla
- 2 teaspoons corn syrup
- 1-1/2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1-1/4 cups quick cooking oatmeal
- 1 (12-ounce) package semisweet chocolate chips
- 1/2 cup peanut butter
Preparation:
Preheat oven to 350 degrees F. In large bowl, combine butter with peanut butter and beat until smooth. Beat in brown sugar and granulated sugar until fluffy. then add eggs, one at a time, beating well after each addition.
Beat in eggs, vanilla, and corn syrup until smooth. Add flour, baking soda, baking powder, and salt and mix well. Add oatmeal and mix until combined.
Drop by large teaspoons onto ungreased cookie sheets. Bake for 10-14 minutes until light golden brown. Cool 1 minute on cookie sheets, then remove to wire racks to cool completely.
For filling, combine chocolate chips and 1/2 cup peanut butter in small microwave-safe bowl. Microwave on high power for 1 minute, then remove and stir. Continue microwaving for 1 minute intervals, stirring after each interval, until mixture is smooth. Let cool 20 minutes.
Make sandwiches with the cookies and the chocolate filling. Let stand at room temperature until set, then store in airtight container.
