SUPPERTIME CASSEROLE


Ingredients:
  • 1 lb. ground beef
  • 1 medium onion, chopped
  • 1 small green pepper, chopped
  • 2 cans (15 oz.) navy beans, drained
  • 1 can (10 oz.) RO*TEL Diced Tomatoes & Green Chilies, undrained
  • PAM All Natural Cooking Spray
  • 6 slices crisply fried bacon, crumbled
  • 1 cup (4 oz.) shredded cheddar cheese
Directions:
Preheat oven to 375 degrees F.  In a large skillet, brown beef with onion
and bell pepper.  Drain excess drippings.  Stir in beans and RO*TEL; heat
to boiling.  Reduce heat; cover and simmer 10 minutes until slightly thickened.
Spoon half the mixture into a 2-quart casserole which has been sprayed with
PAM.  Sprinkle with half the bacon and half the cheese.  Pour remaining bean
mixture over cheese.  Top with remaining bacon and cheese.  Bake uncovered
30 minutes or until mixture is bubbly.  Makes 6 servings.
