Seven-Up Cake

This recipe for Seven-Up Cake is adapted from a recipe book from my mother.
Ingredients:
- 2 cubes margarine, softened
- 1/2 cup shortening
- 3 cups sugar
- 5 eggs
- 1 teaspoon vanilla
- 1 teaspoon butter flavoring (found near vanilla in grocery stores)
- 3 cup flour
- 7 oz. 7-Up
Cream margarine and shortening until fluffy. Add sugar slowly. Add eggs one at a time. Mix in vanilla and the butter flavoring. Alternately add the flour and the 7-Up. Bake in greased, floured bundt pan or 10-inch tube pan at 350 degrees for about 1 hour. If desired, glaze with powdered sugar icing (below).
Powdered Sugar Icing
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla
- 1-2 tablespoons water
Mix all ingredients until smooth and of desired consistency. Drizzle over cooled cake.
