Turkey Meatballs Image © Diana RattrayGround turkey breast makes these turkey meatballs extra lean, and herbs and Parmesan cheese give them loads of flavor. Serve these meatballs with marinara sauce and spaghetti, or use them in your favorite meatball appetizer recipe or for Swedish meatballs.

Yield: Serves 6
Ingredients:
- 1 1/4 to 1 1/2 pounds ground turkey
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon dried leaf basil
- 1/4 teaspoon dried leaf oregano
- 1 clove garlic, finely minced
- 2/3 cup fine dry bread crumbs, divided
- 2 tablespoons grated onion
- 1 large egg
- 2 tablespoons fresh chopped parsley
- 4 tablespoons grated Parmesan cheese
- 2 tablespoons olive oil
Preparation:
Line a jelly roll pan or large baking pan with nonstick foil. Heat oven to 350°.
Combine turkey, salt, pepper, basil, oregano, garlic, 1/3 cup of the bread crumbs, grated onion, egg, parsley, cheese, and olive oil. Mix until well blended.
Put the remaining 1/3 cup of bread crumbs in a plate.
Form the ground turkey into 1-inch meatballs and roll lightly in the bread crumbs. Arrange on the baking pan and bake for about 35 minutes. Serve with the sauce of your choice or use in your favorite appetizer meatball recipe.
