This is an excellent dry rub recipe to keep on hand to shorten your preparation time for chicken, ribs, and pork roast. You will need about 1/4 cup of the dry rub spice mix to cover a 4 to 6 pound whole chicken, so this would be good for about 4 uses. It is great on barbecued, grilled, or oven-roasted chickenpoultry,pork, ribs, and spareribs.

Prep Time: 5 minutes

Total Time: 5 minutes

Yield: about 4 uses

Ingredients:

  • 3 Tablespoons brown sugar
  • 3 Tablespoons sweet Hungarian paprika
  • 1 Tablespoon onion powder
  • 1 Tablespoon dried thyme
  • 1 Tablespoon kosher salt
  • 1-1/2 teaspoons garlic powder
  • 1 teaspoon roasted ground cumin (or traditional ground cumin)
  • 3/4 teaspoon cayenne pepper, or to taste

Preparation:

Whisk together brown sugar, paprika, onion powder, thyme, salt, garlic powder, cumin, and cayenne pepper until well-mixed, breaking up any clumps.

Store in a cool, dark place in an airtight container. Use as seasoning on barbecued, grilled, or roasted chicken,poultrypork, ribs, and spareribs.

Yield: about 1 cup
