This is an excellent dry rub recipe to keep on hand to shorten your preparation time for chicken, ribs, and pork roast. You will need about 1/4 cup of the dry rub spice mix to cover a 4 to 6 pound whole chicken, so this would be good for about 4 uses. It is great on barbecued, grilled, or oven-roasted chicken, poultry,pork, ribs, and spareribs.

Ingredients:
- 3 Tablespoons brown sugar
- 3 Tablespoons sweet Hungarian paprika
- 1 Tablespoon onion powder
- 1 Tablespoon dried thyme
- 1 Tablespoon kosher salt
- 1-1/2 teaspoons garlic powder
- 1 teaspoon roasted ground cumin (or traditional ground cumin)
- 3/4 teaspoon cayenne pepper, or to taste
Preparation:
Whisk together brown sugar, paprika, onion powder, thyme, salt, garlic powder, cumin, and cayenne pepper until well-mixed, breaking up any clumps.
Store in a cool, dark place in an airtight container. Use as seasoning on barbecued, grilled, or roasted chicken,poultry, pork, ribs, and spareribs.
