Dry rubs add tons of flavor to grilled, broiled, or roasted meat with very little effort. This rub uses dried chile and coffee beans to add a hit of spice and a deep, earthy flavor to beef or pork. Use this rub to boost the taste of steaks, chops, or roasts.
To make the rub, remove the stem and seeds from 1 large dried red chile, rip the chile into pieces, and put them in a clean spice grinder or coffee grinder. Add 2 Tbsp. coffee beans (I like to use decaf), 1 tsp. sea salt, and 1/4 tsp. black peppercorns. Grind until uniformly powdery.
It's called a "rub" for a reason: rub the rub all over the surface of the meat. I like to "rub" the meat up to a day before cooking it to let the flavor develop, but even letting the rub sit on the surface of the meat for a few minutes works just fine.
