Peanut Butter and Jelly Witch Cake



A delightful, whimsical cake that is fun and simple to make and sure to be a hit!

Peanut Butter and Jelly Cake Ingredients

  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup peanut butter, creamy or smooth style
  • 1/2 cup C&H® Granulated Sugar
  • 1/2 cup firmly packed C&H® Golden Brown Sugar
  • 3 eggs
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup jelly, grape
  • 1 sugar or waffle ice cream cone
  • Red shoestring licorice, assorted candies

Peanut Butter Frosting Ingredients

  • 1 1-lb. pkg. (approx. 3 3/4 cups) C&H® Powdered Sugar
  • 1/2 cup peanut butter, creamy or smooth style
  • 7 to 8 tablespoons milk
  • 1 teaspoon vanilla extract
  • Green and black food coloring or gel

Instructions

Preheat oven to 350°F. Grease and flour 9x9-inch baking pan. In medium bowl, combine flour, baking powder and salt; set aside. In large bowl with mixer at medium speed, beat peanut butter and sugars until light and fluffy. Add eggs, 1 at a time, beating after each addition. Add milk and vanilla. Add dry ingredients; beat until well mixed. Pour batter into prepared pan.

Bake 30-35 minutes or until cake springs back when lightly touched. Cool in pan on wire rack 10 minutes; remove and cool completely. Cut cake in half horizontally with long, sharp knife. Using long metal spatula, carefully lift off top layer. Spread bottom with jelly. Replace top.

To Assemble Cake: Measure 4 1/2 inches from one corner; then cut diagonally from mark across to opposite corner to form witch's hat. Arrange cake pieces on large tray, according to picture. Color hat with black frosting and face with green frosting. Place cone on cake for nose. Cut licorice into desired lengths; place around hat to resemble hair. Use candies to make eyes and mouth.

Peanut Butter Frosting Instructions

Combine in large bowl, with mixer at low speed, 1 cup confectioners' or powdered sugar and peanut butter. Alternately add remaining 2 3/4 cups sugar and milk. Add vanilla. Beat at medium speed 1-2 minutes until creamy. If needed, add more milk until frosting is of desired spreading consistency. Transfer about half of frosting to bowl; tint with green food coloring for witch's face. Add black food coloring to remaining frosting for witch's hat.
