Description
Mango Chutney has been updated with this Caribbean twist. Tropical fruits, Jerk seasoning and a splash of Jamaican rum make this versatile chutney an instant favorite.Ingredients
- 2 tablespoons brown sugar
- 1/4 cup cider vinegar
- 1 mango, peeled and chopped
- 1 cup chopped papaya
- 1/4 cup grated carrots
- 1 teaspoon Spice Islands Garlic, Minced
- 1/2 teaspoon Jerk Seasoning Blend (see link to recipe)
- 1 teaspoon Spice Islands Ginger, Crystallized
- 1/4 teaspoon hot pepper sauce
- 1 tablespoon Jamaican rum
Directions
Dissolve brown sugar and vinegar in a heavy saucepan over medium-high heat. Add mango, papaya, carrots, garlic, Jerk Seasoning Blend and minced ginger; stir well. Reduce heat and simmer 10 minutes.Stir in pepper sauce and rum. Simmer an additional 5 to 7 minutes. Remove from heat; cool before serving. Chutney can be stored in a sealed container for up to one week in the refrigerator.
