Mango Rum Chutney



Description

Mango Chutney has been updated with this Caribbean twist. Tropical fruits, Jerk seasoning and a splash of Jamaican rum make this versatile chutney an instant favorite.

Ingredients

  • 2 tablespoons brown sugar
  • 1/4 cup cider vinegar
  • 1 mango, peeled and chopped
  • 1 cup chopped papaya
  • 1/4 cup grated carrots
  • 1 teaspoon Spice Islands Garlic, Minced
  • 1/2 teaspoon Jerk Seasoning Blend (see link to recipe)
  • 1 teaspoon Spice Islands Ginger, Crystallized
  • 1/4 teaspoon hot pepper sauce
  • 1 tablespoon Jamaican rum

Directions

Dissolve brown sugar and vinegar in a heavy saucepan over medium-high heat. Add mango, papaya, carrots, garlic, Jerk Seasoning Blend and  minced ginger; stir well. Reduce heat and simmer 10 minutes. 

Stir in pepper sauce and rum. Simmer an additional 5 to 7 minutes.  Remove from heat; cool before serving. Chutney can be stored in a sealed container for up to one week  in the refrigerator.

Mango Rum Chutney pairs well with a variety of meats and seafood. Try it with Grilled Jerk Pork!
