Clotted Cream
I was always a little suspicious of those little jars of clotted cream in the grocery store. Was it the same quality as what the British were spreading on their teatime scones along with a smear of jam? My experience was limited, but I wanted to try making my own. The recipes I found online were all similar. Cook heavy, pasteurized cream for a long time at a low constant temperature. OK, I was game. I waited till I knew I was meeting up with some girlfriends and started the process. I knew they’d give me their candid opinions.

When strawberry season arrives, I immediately start dreaming of strawberry shortcakes topped with dollops of sweetened whipped cream. But I also adore the luscious ripe berries in side dishes like this healthier, yet irresistible, Basil, Brie and Strawberry Salad. Strawberry Salad
Gorgeous, ripe strawberries are typically featured in my fruit salads, but I wanted to share a salad that was more substantial, even suitable for a light lunch. This meant a protein source was in order. And what better than Brie? The tiny cubes add a creamy contrast to the berries and celery without blowing the diet. Just like whipped cream is the perfect pairing with strawberries in the classic shortcake, this luscious brie is an ideal match for these berries bathed in vinaigrette
