Cooler, wetter, windier weather has arrived in the Pacific Northwest, so it's time to get some warming, hearty (yet healthy meals) on the table.
Shepherd's Pie
This a low fat take on a classic English dish. Shepherd's Pie was traditionally made with leftover meat--usually lamb or beef. This is a recipe that can be made ahead and frozen for later use. I often prepare it one day and use it the next.
Mini Meat Loaves
These low fat mini meatloaves are a big hit with my kids. For one thing, they're just the right size. These meatloaves are also good for them, too, as they're made from extra-lean ground beef and packed with shredded veggies.
Slow Cooker Spicy Chicken Stew
Come home to an aromatic and delicious meal that needs little more than a side of rice or warm tortillas and perhaps a dollop of reduced-fat sour cream. Or simply enjoy it without accompaniment.
White Turkey Chili
This white turkey chili makes a hearty, wholesome meal on a cold night. Serve with whole-grain rice or with some baked tortilla chips and a small amount of reduced-fat sharp cheese.
