Sometimes you need the fastest recipes you can find. When unexpected company shows up at your door or you spontaneously invite someone over for dinner, or you just can't face another drive-through dinner, these quick and easy last minute chicken breast recipes will come to the rescue.
Some of the recipes start with cooked chicken, others with raw chicken. It's a good idea to keep both cooked and uncooked chicken in the freezer just so you can assemble these recipes easily.
A well-stocked pantry is also key to last minute cooking. If you have a good supply of items like frozen vegetable combos, canned tomatoes, broth, olive oil, onions, seasonings, canned beans, and cheese on hand you can whip up a meal in just minutes.
