Simple Sweet Potato Soufflé Recipe
Soufflé sounds a lot more complicated than it actually is. No matter what else you have cooking in your kitchen, you should have no trouble throwing together this simple recipe.
Ingredients
- 3 pounds sweet potatoes, peeled and cubed
- 1 can evaporated milk
- 1/2 cup brown sugar
- 5 tablespoons unsalted butter, melted, plus extra for buttering dish
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 2 eggs, beaten
- Salt and pepper to taste
- 1 cup coarsely chopped roasted, salted cashews
- 1/2 cup mini marshmallows
- 1/2 cup sweetened shredded coconut
Instructions
- Fill a large pot with cold salted water and set the sweet potatoes inside.
- Bring the water in the pot to a boil, then reduce the heat and simmer for 20 minutes, or until the sweet potatoes are fork tender.
- Drain the potatoes and mash them in a large bowl.
- Add the evaporated milk, brown sugar, butter, vanilla, cinnamon, salt and pepper and eggs to the potatoes and mix thoroughly.
- Press the mixture into a buttered casserole dish and bake at 350 degrees for 25 minutes.
- Mix together the cashews, marshmallows and coconut in a small bowl. After 25 minutes, pour the mixture on top of the sweet potatoes and return to the oven for approximately 10 more minutes, or until the marshmallows are lightly browned.
- Let sit for five minutes before serving.
