Enchilada Casserole

Yield: 6-8 servings
Ingredients
- 1 pound ground beef, browned and drained
- 1 can enchilada sauce
- 1 cup of your favorite salsa
- 1 onion, chopped and sautéed
- 1 can black beans, drained
- 1 can corn, drained
- 8 corn tortillas
- 16 ounces shredded Colby jack cheese
Method
- Preheat oven to 350 degrees.
- Pour enchilada sauce into a shallow bowl or pan.
- Dip 4 corn tortillas in enchilada sauce and use to line the bottom of a 9x13 pan.
- Mix onions salsa, beans, and corn.
- Pour over tortillas.
- Dip remaining tortillas in enchilada sauce and place over filling.
- Pour remaining sauce over top of tortillas.
- Sprinkle with cheese.
- Bake for 30 minutes, until cheese melts and casserole bubbles.
