Chicken Meatball Soup


Chicken Meatball Soup
Jane's Adventures in Dinner


Ingredients
  • Soup:
  • 1/2 cup mushrooms
  • 2 ribs celery
  • 2 small carrots
  • 2 garlic cloves
  • 1/2 cup chopped red pepper
  • pinch of sage
  • 6-7 cups of chicken stock
  • 1 cup cooked brown rice
  • Meatballs:
  • 1 pound of ground chicken or turkey
  • 2 tablespoons (2 tsp dry) parsley
  • 1/2 tablespoon chopped fresh sage (half teaspoon dried)
  • half an apple (I like a tart one like a honey crisp or Granny Smith) grated
  • pinch salt and pepper
  • 2 tablespoons chopped onion
Instructions
  1. For the soup; saute veg in 2 T butter until just softening. Add in herbs, rice and stock. Heat through.
  2. Meatballs:
  3. Mix together place on parchment lined baking dish and bake in the oven at 350 415 to 20 minutes or until of meatballs are no longer pink in the middle.
  4. Drop into the soup and enjoy!
