DUCK IN OLIVE GRAVY | |
4 ducks
1 1/2 c. chopped bell pepper 1 1/2 c. chopped celery 3 cloves garlic, pressed 1 c. sherry 1/4 c. minced parsley Salt and pepper to taste Sm. bottle green olives, sliced 3 tbsp. oil mixed with 3 tbsp. flour 4 chopped onions 3 bay leaves 1/2 tsp. thyme Tabasco to taste 3-4 c. water
Brown duck at 500 degrees. Mix and blend other ingredients in the water. Pour over the duck. Bake at 350 degrees until tender, 2 1/2 hours. Stir in the sliced olives the last 30 minutes of cooking.
