Zesty bourbon steak
This zesty bourbon glaze is tangy with a kick and perfect to slap on anything that you want to barbecue.

- Ingredients
- 4 beef scotch fillets
Zesty bourbon glaze
- 3/4 cup orange juice
- 3/4 cup brown sugar, firmly packed
- 1/4 cup bourbon whiskey, plus 1 tbs extra
- 1 tbs orange rind, finely grated
- 1 tsp mustard powder
- Step 1Make glaze: Stir orange juice, firmly packed brown sugar, bourbon whiskey, finely grated orange rind and mustard powder in a saucepan over low heat for 3 minutes or until sugar dissolves. Increase heat to medium. Simmer for 12-15 minutes or until glaze thickens. Stir in 1 tbs extra bourbon whiskey.
- Step 2Preheat a barbecue grill or chargrill on medium-high. Cook 4 beef scotch fillet steaks for 2 minutes each side or until rare. Reduce heat to medium. Brush with glaze. Cook for 2-3 minutes each side or until glossy and charred.Australian Good Taste - October 2012 , Page 111
