Honey-Bourbon Glazed Pork Loin

Ingredients:
- ***Glaze***
- 1/2 cup honey
- 1/4 cup light brown sugar
- 3 tablespoons bourbon
- 1 tablespoon Dijon mustard
- 1/4 cup orange juice
- ***Pork Roast***
- 1 boneless pork loin, 3 to 4 pounds
- 2 cloves garlic, cut in slivers
- salt and pepper or seasoning
- 5 to 6 slices bacon, halved crosswise, optional
Preparation:
Prepare glaze. Combine the honey, brown sugar, bourbon, mustard, and orange juice. Bring to a simmer and simmer for about 5 minutes. Set aside.
Heat oven to 350°.
Wash pork roast and pat dry. Cut away excess fat and discard. Place the roast on a rack in a roasting or baking pan. With a sharp knife, cut several small slits evenly over the roast and put a sliver of garlic in each slit. Sprinkle with salt and pepper and arrange bacon over the roast, if using. Roast until an instant read thermometer registers about 145°, about 1 1/2 hours for a large roast. Brush with the glaze and continue roasting to about 155°.
