VEGETARIAN MEATBALLS


VEGETARIAN MEATBALLS

2 eggs
6 T. water
2 t. soy flour
1 c. cream-style cottage cheese
1/2 c. onion, chopped 
1 t. basil
1/2 t. salt
l c. chopped walnuts or pecans
2 c. dried bread crumbs 
2 c. Mozzarella cheese 
3 1/2 c. spaghetti sauce

Beat eggs, water, soy flour, cottage cheese and seasonings. Stir in bread crumbs and nuts. Shape into walnut-sized balls. In a (9x13 inch) pan, pour a thin layer of spaghetti sauce. Line meatballs on top of the sauce in the pan. Pour remaining sauce over meatballs and sprinkle cheese over all. Bake 45 minutes at 350°.
