VEGETARIAN MEATBALLS
VEGETARIAN MEATBALLS2 eggs6 T. water2 t. soy flour1 c. cream-style cottage cheese1/2 c. onion, chopped 1 t. basil1/2 t. saltl c. chopped walnuts or pecans2 c. dried bread crumbs 2 c. Mozzarella cheese 3 1/2 c. spaghetti sauceBeat eggs, water, soy flour, cottage cheese and seasonings. Stir in bread crumbs and nuts. Shape into walnut-sized balls. In a (9x13 inch) pan, pour a thin layer of spaghetti sauce. Line meatballs on top of the sauce in the pan. Pour remaining sauce over meatballs and sprinkle cheese over all. Bake 45 minutes at 350°. (serves 6-8)
