Pickled Red Onions in Hot Pepper Lime Juice
INGREDIENTS:
* 1 medium red onion, cut into thin strips
* 1 Tablespoon white vinegar
* 1 Serrano pepper, chopped
* 1 teaspoon kosher salt
* 1 Tablespoon sugar
* approximately 3/4 cup lime juice
* 1 Tablespoon white vinegar

* approximately 3/4 cup lime juice
DIRECTIONS:
Pack the onion, white vinegar, pepper, salt and sugar in a glass jar. Pour in the lime juice and gently press the onions down. The juice should cover the onions; add more lime juice if necessary.
Cover and refrigerate overnight (feel free to shake the jar a couple times). Taste a little bit of the liquid and adjust salt and sugar, if desired.
Use to top tacos, burgers, soups, etc.
