Deniece's Blue-Ribbon Meatloaf (plus baked oatmeal and salmon patty instructions too)
Deniece's Blue-Ribbon Meatloaf
3 1/2 pounds good fresh ground beef
2 eggs
ketchup--about 1/2 cup
1 tablespoon sage
1/2 cup chopped onion
Season Salt--a couple good dashes
Good quality Sea Salt--several good grinds
1 tablespoon thyme
1/4 tsp. black pepper
1 tablespoon rosemary
1 tsp. fresh minced garlic
1 tsp. worcestershire sauce
3-4 handfuls plain bread crumbsa
2 or 3 slices stale bread, crumbled
1 large can stewed tomatoes with juice, chopped
2-3 bay leaves
about 1-2 teaspoons rosemary for the top
In a large bowl, fluff together your ground beef then add in the rest of the ingredients. With clean hands (no jewelry) mix everything together well. Prepare your baking pan with a layer of foil and mound the meat mixture into a loaf. Smooth the top then sprinkle on additional rosemary and a few bay leaves. At this point you can cover, refrigerate and bake later. I didn't write down the baking instructions, but you'd bake it about an hour at 350 degrees or just until the mixture pulls away and the juices are clear. I have made it into mini loaves too for smaller meals and it freezes beautifully.
