Tomato Parmesan Gratin

Ingredients
2 cups prepared garlic croutons, divided
2 cans (14.5 oz each) Del Monte® Stewed Tomatoes, drained
1 Tbsp. fresh thyme or 1 tsp. dried thyme
3 Tbsp. extra-virgin olive oil, divided
1/2 cup (2 oz.) grated Parmesan cheese
Directions
Heat oven to 425°F. Coat a shallow 1 1/2 to 2-quart baking dish with non-stick cooking spray.
Place croutons in a reclosable plastic bag; crush to a coarse-crumb. Combine the tomatoes, 1/2 of croutons, thyme and 1 Tbsp. olive oil. Toss gently and spoon evenly in prepared baking dish.
Toss together remaining crushed croutons, Parmesan cheese and 2 Tbsp. oil in a small bowl. Sprinkle crouton mixture over tomatoes. Bake 18 minutes or until golden brown.
